Pho Fuscia, Seattle WA

Pho Fushcia is a Vietnamese restaurant in Pioneer Square. I would go there often for lunch when I used to eat out every day. They are by far my favorite pho place in Seattle. I love that they use fresh tofu instead of fried and have an amazing assortment of vegetables that come in it (I know it doesn't look like it in the photo but there are carrots, baby corn, snow peas, broccoli, cauliflower, etc in there). The broth always take a min to get used to and then I love it - just make sure you ask for it with vegetable broth.



They also have a tofu vermicelli bowl that is really tasty. The tofu is cooked in some seasoning served over vermicelli served with sauce and a side salad. It took until recently to try this as I love the pho so much I couldn't ever not get it. Raymond met me for lunch one day and he disliked most soups so this was his choice and I might have to get it myself some time when I don't feel like pho....if that ever happens. Or just make him meet me more often and steal some of his so I get a little bit of everything. They also have a few other options that are or can be made vegan such as the tofu bahn mi (which I haven't tried so I have no idea if it is as good as both of these dishes).

Overall - If you are a pho fan I would definitely try Pho Fuchsia. It is my favorite pho in Seattle and everything I have tried here has been delicious.
